Ingredients

Lane's Brisket Rub
1 box Large Rigatoni or Elbow Macaroni Noodles
2 Cups Farmhouse Cheddar Cheese, shredded
1 Cup White Cheddar Cheese, shredded

Cheese Sauce Ingredients

Lane's Brisket Rub
1 block Cream Cheese, cubed
2 Cups Farmhouse Cheddar Cheese, shredded
1 Cup White Cheddar Cheese, shredded
3 Cups Heavy Cream
1 Cup Milk
1/2 stick Butter (1/4 Cup)
1 Tbsp Flour

Directions

On the stove on medium heat to a saucepan add 1/2 stick of butter and 1 Tbsp of flour. Stir until smooth then add 3 cups heavy cream, and 1 cup milk.
Bring to a simmer and add cubed cream cheese. Slowly stir until a smooth sauce is formed.
Reduce heat to low, and slowly fold in shredded farmhouse cheddar and white cheddar until smooth and combined.
Add 1 Tbsp Lane's Brisket Rub to the sauce.
Preheat your smoker or grill to 260 °F.
Prepare the pasta: Bring a medium to large pot of water to a boil. Cook the pasta to al dente, strain and let cool.
Add the pasta to a cast iron or grill safe casserole dish. Pour the cheese sauce over the pasta and fold in with an additional 1.5 cups of farmhouse cheddar and 1/2 cup of white cheddar. The top with the remaining 1/2 cup of both farmhouse and white cheddars.
Place in your smoker for 2 hours or until golden brown.
Let cool and serve.

Recipe Note
