Competition Rib Rub for 3-2-1 Ribs
The short answer. A competition rib rub balances sweet, savory and heat so it builds a glossy, mahogany bark on 3-2-1 ribs. Mix 2 parts brown sugar and 1 part each sweet paprika, kosher salt, 16 mesh black pepper and granulated garlic, plus a little onion powder, mustard powder and honey granules. Apply an even coat, smoke at 225°F, wrap, then sauce.
Competition ribs look a certain way: deep red-brown color, a shine that catches the light, and a bite that pulls clean from the bone. That look starts with the rub. The good news is you don't need a secret recipe. You need the right building blocks in the right ratio.
This rub is built for the 3-2-1 method. Not sure whether to wrap? Read 3-2-1 Ribs vs No-Wrap Ribs first.

Competition rib rub recipe
- 1/2 cup brown sugar
- 2 tbsp honey granules
- 1/4 cup sweet paprika
- 2 tbsp coarse kosher salt
- 2 tbsp 16 mesh black pepper
- 2 tbsp granulated garlic
- 1 tbsp onion powder
- 1 tsp mustard powder
- Optional: 1/2 to 1 tsp cayenne for a back-end kick
Whisk it all in a bowl, break up the sugar, and load it into a 16 oz shaker. For the grill-side shaker, a 10 oz stainless rub shaker on its coarse holes handles the sugar and pepper well.
Pitmaster tip: the Competition BBQ DIY Rub Bundle includes the sweet paprika, 16 mesh pepper, granulated garlic, kosher salt, onion powder, brown sugar and mustard powder for this recipe, plus a 16 oz shaker. Add honey granules and you're set. If it's sold out, the Sweet Heat DIY BBQ Rub Bundle swaps in honey granules, chipotle and cayenne for a spicier rack.
How to apply it
- Pull the membrane off the back of the ribs and pat them dry.
- Add a thin binder if you like, such as yellow mustard or a little oil.
- Shake the rub from about 12 inches up in even passes. Bone side first, then the meat side. See how to use a seasoning shaker for the technique.
- Let the ribs sit until the rub looks wet, about 15 to 30 minutes.
Running it through 3-2-1
3 hours unwrapped at 225°F: smoke builds and the sugar and paprika set into bark. Spritz once the surface looks dry if you like.
2 hours wrapped: wrap in foil with a little butter, a drizzle of honey or a sprinkle of honey granules and brown sugar. This is where the ribs get tender.
1 hour unwrapped: unwrap, brush on a thin coat of sauce, and let it tack up. Done is when the rack bends easily and the surface cracks.

FAQ
What is in a competition rib rub?
Most start with sugar, paprika, salt, pepper, garlic and onion. Sugar and paprika build color, salt and pepper season, and garlic, onion and mustard add savory depth.
Should rib rub have sugar?
For a sweet, glossy competition style, yes. Sugar caramelizes into a mahogany bark. If you cook hot or prefer savory ribs, cut the sugar in half.
When should I put rub on ribs?
Apply it 15 minutes to a few hours before the ribs go on. You can rub them the night before if your rub is not too salty.
Do you add more rub when you wrap?
Many cooks add a light layer of sweetness in the wrap, like honey granules or brown sugar with butter. Keep it light so it does not get syrupy.
Can I use this rub on pork butt or chicken?
Yes. It works on pork butt, chicken thighs and wings. Watch the sugar at higher temps on chicken.
