Technique

  • Roll loose 2 to 4 oz balls and keep them cold until they hit the steel
  • Drop the ball, lay a square of paper flat across the top
  • Press straight down hard for about ten seconds and hold
  • Peel the paper off and discard it, then leave the patty alone until the edges go brown and lacy
  • Scrape under it with a stiff spatula so the crust comes up with the burger
