9 oz Bag Brines a 16-18 lb Bird 12 to 24 Hour Soak Mild Heat

Super Soaker Bird Brine by The Spice Guy takes the guesswork out of brining. One pre-measured 9 oz bag brines a 16 to 18 lb turkey. Dissolve it, drop in the bird, top it off with water and let the fridge do the work.

The base is salt and brown sugar for moisture and balance, built up with whole mustard seed, black pepper, coriander, thyme, bay leaf and juniper berries. The result is a juicier bird with savory, herbal flavor seasoned all the way through, whether it finishes in the smoker, on the grill or in the oven.

Flavor Profile

Savory and lightly sweet up front from the salt and brown sugar, with a warm pepper and coriander middle. Juniper berries and bay leaf bring a piney, herbal note, and mustard seed adds a subtle tang on the finish. It seasons the bird without fighting your rub.

How to Use

  1. Make sure the bird is fully thawed. Remove the neck and giblets.
  2. Add a few inches of cold water to a brine bag (included in the Turkey Takeover brine kit), bucket or food-safe cooler. Pour in the entire bag of Bird Brine and stir until dissolved.
  3. Add the bird and top off with cold water, chicken stock, broth, apple juice or your choice of liquid until it is fully submerged.
  4. Brine in the fridge for 12 to 24 hours (for best results, at least 1 hour per pound). Keep it cold the whole time.
  5. Remove the bird, discard the brine, and pat dry. Do not rinse. Season and cook as usual.
Pitmaster Tip: For crispier skin, let the brined and dried bird rest uncovered in the fridge for a few hours before it goes on the smoker.

Level Up Your Brine

Bird Brine is ready to go as is, but it also makes a great base for your own add-ins. Toss any of these into the water along with the brine mix:

  • Oranges: Halve 2 or 3 oranges, squeeze the juice into the water and drop in the rinds. Citrus brightens the herbs and pairs well with the juniper.
  • Lemons or limes: Same method as the oranges for a sharper, zippier finish. Mix and match with the oranges for a citrus blend.
  • Apples: Quarter 1 or 2 apples, or swap a few cups of the water for apple cider for a sweeter, fall-style bird.
  • Onion and garlic: A quartered onion and a halved head of garlic add a deeper savory base.
  • Fresh herbs: A few sprigs of rosemary, sage or extra thyme. Bruise them in your hands first to release the oils.
  • Warm spices: A cinnamon stick, a few whole cloves or a spoonful of whole peppercorns for a holiday twist.
  • A little extra sweet: A splash of maple syrup or honey if you like a sweeter, deeper-browning skin.
Keep It Safe: Don't add extra salt, the bag already has the right amount. If you simmer your add-ins on the stove to bring out more flavor, let the liquid cool completely before the bird goes in. The brine should always be fridge cold.
